MSG Wastewater Treatment: Fermentation Broth, Crystallisation Mother Liquor and the High-Ammonia Stream
Monosodium glutamate is made by fermenting glucose with Corynebacterium to build glutamic acid, then neutralising and crystallising it. The wastewater is the leftover of that fermentation, and it is one of the more demanding food-grade streams: very high COD from the spent broth and the crystallisation mother liquor, a heavy ammonia load from the neutralisation step, and usually a high salt content from the glutamate itself. It is fully biodegradable in principle, but the ammonia and the salt together mean the plant has to be designed as a nutrient-balanced system, not a simple digester.
Where the Water Comes From
Fermentation broth is the base load. After the glutamate is extracted the spent broth still holds sugars, cells and the soluble organics the culture left behind, and it is the stream that sets the COD envelope.
Crystallisation mother liquor is the concentrated end. The liquor left after glutamate crystals are pulled carries the most salt and the most residual COD, and only the largest plants handle it separately.
Neutralisation and equipment wash add the rest. The caustic or soda used to convert acid to salt shows up here as the ammonia and the alkalinity the biology later has to manage.

Cooling and boiler water stay out of the process stream by design. Mixing them in only dilutes the salt at the cost of a much bigger treatment volume. The process logic sits close to what is described in corn starch production wastewater treatment, particularly on the pretreatment side.
The Ammonia and the Salt
Ammonia is the constraint nobody mentions first. Neutralisation liberates a lot of ammonium, and if the plant is not built to strip or nitrify it, the discharge fails on nitrogen long before it fails on COD.
The salt rides along with the glutamate. Like soy sauce, the chloride or sulfate level decides whether conventional biology applies or whether a salt-tolerant route is needed.

Treat ammonia and COD as one balance. The carbon in the broth feeds the denitrifiers that eat the ammonia, so the two are solved together or they are solved badly. Much of this mirrors the situation set out in Edible Oil Refinery effluent.
Solids and the Broth
Spent cells are the solids and a nutrient at once. They settle poorly and they keep respiring, so they are pulled early by sedimentation or flotation before the biology sees them.
The mother liquor is handled separately where the site can. Evaporation or resource recovery on that stream removes the worst of the salt and COD at the source rather than at the drain.
Recovered organics have value. Some plants recover protein or feed-grade material from the broth solids, which is both a COD cut and a small credit against the treatment cost.

Biology Built for Nitrogen
Anaerobic digestion takes the bulk COD and returns biogas, but on its own it leaves the ammonia untouched. The aerobic stage behind it has to nitrify, and often a denitrification loop closes the nutrient balance.
Reference Data from 42 Commissioned Plants
Across 42 commissioned plants where we hold complete COD records, influent COD ranged from 200 to 172,000 mg/L and treated effluent from 50 to 5,000 mg/L. Average removal across that set is 87.1% — not a marketing figure, but the measured mean.
That average is worth pausing on. It sits well below the 95%-plus numbers most suppliers quote, because the set includes genuinely difficult streams. On some electroplating and municipal duties the installed configuration only reaches about half the influent COD, and saying that up front is more use to you than a number the plant will never hold.

Equalisation has to hold the campaign swings. Fermentation batches arrive in waves, and a tank sized on the peak keeps the nitrifiers from being shocked by a sudden ammonia spike.
The salt tolerance of the culture sets the ceiling. Once the chloride passes the tolerant threshold, the design shifts toward halophilic digestion or toward concentrating and evaporating the mother liquor.

Design for the ammonia, not just the COD. A plant that only dims the organic load will still breach discharge on nitrogen, and retrofitting nitrification is painful.
Keep the mother liquor out of the main stream if you can. Handling the concentrate separately is almost always cheaper than diluting the whole plant.
Balance carbon against nitrogen on purpose. The broth's own organic carbon is the cheapest denitrification feed you have, so use it rather than buying an external carbon source. The process logic sits close to what is described in Grain Distillery Spent Wash Treatment, particularly on the pretreatment side.
Integrated Treatment Strategies
If your site also runs this kind of duty, Tannery and Leather Wastewater Treatment covers the cost side of the decision in more depth. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.
Why Choose Baihuipu as Your Manufacturer
Picking a supplier for this kind of plant is mostly about who carries the risk when something goes wrong. We have built this equipment for more than twenty years, and we are the ones who fabricated it, programmed the controls and will still answer the phone three years from now.
Manufacturing Base in Guangdong
Owned production lines mean we control tolerances, materials and delivery. Standard modular units and bespoke skids are both built by our own people, so schedule commitments are ours to keep.
Experience Built the Hard Way
Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.
Twenty-Plus Export Markets
We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.
We Engineer the Whole Train
Screening, equalisation, biological or chemical treatment, membranes, evaporation, brine handling — the complete line comes from one organisation. Process design, mechanical, electrical and PLC programming sit under the same roof, so there is no gap for finger-pointing at handover.
Spares, Service and Commissioning
Membranes, dosing pumps, diffusers, instrumentation and blowers are stocked for the systems we sell. Our control systems support remote diagnostics, and we can put an engineer on site for commissioning, training or an unplanned shutdown.

Frequently Asked Questions
Which discharge standard will the treated water meet?
We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.
How much operator attention does the system need day to day?
Automatic control handles dosing, backwash and level control. Realistically your team spends time on chemical top-up, sample testing and sludge handling — maybe one to two hours per shift on monosodium glutamate duty, less if you opt for remote monitoring.
Can you work with our existing equipment?
Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.
