Pickled Vegetable Processing Wastewater Treatment: Salt Brine, Fermentation Liquor and Colour

A pickled vegetable plant washes, trims, brines, ferments, and packs, and the water it sends out is defined by one number: salt. Brine carryover from the tanks, wash water from the fermentation crocks, and the brine used to cover the product all end up in the drain, along with soil from the incoming vegetables and trim pieces from the cutting tables. The organic load is modest and biodegradable. The salt is not. A plant that sizes its treatment around the organic load and discovers the salt afterwards ends up rebuilding the biological stage, and the reason is that salt decides the route before anything else does.

Where the Salt Comes From

Brine carryover is the dominant source. Vegetables leave the tanks wet, the packaging carries some of that brine to the drain, and the wash water between brining and packing dilutes it without removing it.

Fermentation liquor is the second source. As the vegetables ferment, the brine exchanges salt and acid with the product, and the spent liquor is drained, washed or partly replaced during the campaign.

Tank and floor washing is the volume of the plant. It is weak in organics but it carries the salt that was already in the tanks, which is the part that matters.

Soil and trim solids ride along in all of it, and they are removed mechanically before anything chemical happens. Much of this mirrors the situation set out in Tofu and Soy Product Plant Wastewater Treatment.

Salinity is the defining constraint. Conventional activated sludge loses nitrification first and carbon removal later as salt climbs, and the loss is gradual enough that operators blame load or temperature before they blame the salt.

Three routes exist. Dilution with cleaner streams buys headroom where the sewer consent allows it. Salt-tolerant biology works but needs patient acclimatisation and generous sludge age. Membrane desalination works and returns reusable water, but it concentrates the salt into a brine that then needs an outlet.

settling tank detail

The honest starting point is a salt balance over the whole plant. Where brine is bought for the product and the only exit is the effluent, no biological upgrade fixes the problem permanently.

Where a crystallization step is justified, the brine becomes a solid salt for disposal, and the water returns to the wash duties. That loop, where it closes, is the rare case where the problem leaves rather than being managed.

Solids and Preparation

Soil, trim and peel fragments are screened out early. A rotary screen on the washing water and a grit channel on the trim water remove the bulk before any chemical stage sees it.

A small flotation or settling step takes out the fine organic particles that survive screening, and it is specified with the salt in mind, because salt water floats solids differently than fresh water does. Where several streams need joint treatment, Acidity, Spent Mash and Colour is the more detailed reference.

Equalisation is more important here than in most food plants. The brine campaign runs in batches, and a batch dump can double the influent salt for an hour.

Biology and the Salt Ceiling

The organic fraction is ordinary food waste, and once the load is smoothed the biology treats it without drama. The design question is never the carbon; it is the salt ceiling of the chosen biomass.

Where the salt is moderate, a salt-acclimatised aerobic stage with a long sludge age runs for years. Where the salt is high, the biological route is limited to a polishing duty behind a membrane or evaporation step.

Operators watch nitrate and nitrite as the early warning. Nitrification fades first, and the fade is visible in the effluent trend weeks before it is visible anywhere else.

What This Looks Like in Practice

For comparison, our 2021 project in Foshan, Guangdong ran at 60 m³/day with influent COD near 2,000 mg/L and treated water around 90 mg/L. That is 95.5% removal in practice, not on paper.

Operating Notes

Measure the salt before designing anything. It decides the route and it decides the budget.

Recover brine where the process can take it back. A plant that needs brine is the rare case where reuse beats removal.

Never let a tank dump go straight to the biology. An hour of neat brine costs days of recovery, and the recovery is paid for in the consent results. For the reuse angle specifically, Instant Noodle Manufacturing effluent goes further than we can here.

Why Choose Baihuipu as Your Manufacturer

Two decades in this industry teaches you that most treatment problems are procurement problems in disguise. Someone bought the cheapest skid, nobody checked the equalisation volume, and eighteen months on the plant cannot hold its consent limit. We build differently.

In-House Fabrication

Our Guangdong works produces everything from standard modular units to fully bespoke lines. Building in-house keeps cost, schedule and quality under our own control rather than a subcontractor's goodwill.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Experience Built the Hard Way

Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.

Documentation You Can Actually Audit

Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

We Engineer the Whole Train

Screening, equalisation, biological or chemical treatment, membranes, evaporation, brine handling — the complete line comes from one organisation. Process design, mechanical, electrical and PLC programming sit under the same roof, so there is no gap for finger-pointing at handover.

After the Handover

Spares for everything we install are held in stock. Remote telemetry is available on most systems, and our service engineers commission, train your operators and turn out for emergencies.

Frequently Asked Questions

How long does a pickled vegetable processing system take to deliver?

Standard units ship in about 9 to 12 weeks. Custom trains with salt balance decides everything included run longer — plan for 15 to 22 weeks once detailed engineering starts. Site installation and wet commissioning add another few weeks.

What does it cost to run, per cubic metre?

Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.

Which discharge standard will the treated water meet?

We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.
