Vinegar Brewing Wastewater Treatment: Acidity, Spent Mash and Colour

Vinegar is made twice over: first by an alcoholic fermentation, then by an aerobic acetous fermentation, and both leave water behind. Wash water from fermenters and acetators carries acetic acid, residual ethanol and spent mash fines. Filtration and bottling lines add colour, tannins and cleaning agents. The stream is acidic enough to matter, biodegradable enough to reward biology, and coloured enough to draw regulatory attention even after the organic load is gone. A vinegar plant that separates the strong fermenter water from the general washwater, neutralises what needs neutralising, and gives the biology a steady feed, ends up with a compact and forgiving treatment system.

An Acidic, Biodegradable Stream

The acetous fermentation leaves residual acetic acid in the wash water, and acetic acid is at once a load and a gift. It is a load because it arrives at pH well below neutral; it is a gift because it is the easiest carbon a treatment plant will ever eat.

Residual ethanol from the alcoholic stage behaves the same way, contributing biodegradable demand with no toxicity.

Spent mash fines carry starch and protein, and they settle. A plant that lets them reach the biological stage wastes aeration on solids that a screen would have caught.

Bottling and filtration water brings colour compounds, mainly from browning reactions in the mash and from wood or caramel in some products, and colour persists after biology if it is not addressed directly. The process logic sits close to what is described in Vegetable Oil Refinery Wastewater Treatment system, particularly on the pretreatment side.

Neutralisation and Equalisation

pH correction comes first. Lime dosing or a caustic line lifts the water above the range where biology struggles, and the mixing has to be real, because acidic slugs reaching an aeration basin kill nitrifiers hours before they show in the effluent result.

Equalisation follows neutralisation. Vinegar plants run batch fermentations, and batch operations mean batch dumps, and the equalisation tank is what converts the dumps into a diet the biology can digest.

settling tank detail

The equalisation tank is also where the plant sees the truth about its own variability. Operators who sample there know their real peaks, and the ones who sample only at the outfall find out late.

Biological Treatment

The carbon is volatile fatty acid and sugar, so anaerobic treatment is efficient where volumes justify it, and the biogas from an anaerobic reactor is itself acetic in origin and burns cleanly.

Aerobic treatment handles the full stream comfortably at moderate volumes. The design check is nitrogen: mash protein means some ammonia, and a compact anoxic zone in front of aeration keeps it inside consent without much thought.

Sludge from this industry is normal biological sludge and dewaters with standard equipment. There is no exotic residue, which is one of the quieter advantages of the sector.

What This Looks Like in Practice

One reference point: a 60 m³/day installation we delivered in Foshan, Guangdong (2021) was treating feed at roughly 2,000 mg/L COD and holding discharge near 90 mg/L, about 95.5% removal.

A second unit of the same class, delivered in Hong'an, Hubei during 2021, ran 150 m³/day at 1,961 mg/L feed COD down to 200 mg/L.

process equipment overview

Colour survives biology. Where the discharge consent sets a colour limit, the polishing step is coagulation and filtration, or in some plants a short ozone contact that breaks the chromophores rather than removing them.

Coagulant choice matters. Iron salts darken some coloured streams before they clear them, so jar testing with the actual effluent is worth the hour it takes.

Polishing is sized on colour and on occasional solids carryover, not on the main organic load. That is a small unit, and it stays small when the biology upstream is steady. The process logic sits close to what is described in Dye Manufacturing Wastewater Treatment system, particularly on the pretreatment side.

Operating Notes

Neutralise at source for the strongest acidic dumps, not only at the head of the plant. Pipe corrosion is a treatment cost nobody budgets. The same selection criteria reappear in Bioethanol Distillery effluent, which is worth opening alongside this one.

Screen the mash fines before the equalisation tank. They settle there otherwise, and cleaning an equalisation tank is nobody's favourite job.

Sample for colour at the same time as for BOD. The two do not track each other in this industry, and a consent breach on colour is just as real.

Why Choose Baihuipu as Your Manufacturer

Choosing a manufacturer here comes down to one question: who is still accountable once the commissioning team flies home. Our answer is that we build and programme our own equipment, then stand behind it for the life of the plant.

Own Factory, Real Capacity

Tanks, skids, control panels and membrane housings are built in our own Guangdong facility. Nothing critical is subcontracted, which is why we can commit to delivery dates and hold quality across a batch instead of hoping the shop floor gets it right.

Experience Built the Hard Way

Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.

We Engineer the Whole Train

Screening, equalisation, biological or chemical treatment, membranes, evaporation, brine handling — the complete line comes from one organisation. Process design, mechanical, electrical and PLC programming sit under the same roof, so there is no gap for finger-pointing at handover.

Spares, Service and Commissioning

Membranes, dosing pumps, diffusers, instrumentation and blowers are stocked for the systems we sell. Our control systems support remote diagnostics, and we can put an engineer on site for commissioning, training or an unplanned shutdown.

Frequently Asked Questions

What information do you need to quote?

Water analysis for your worst-case stream, peak and average flows, discharge limits, available footprint and utilities. If you do not have a full analysis yet, we can start from a partial one and flag the gaps.

How do you handle sludge from this process?

Sludge handling is where most budgets quietly blow out. We size dewatering against realistic solids production, and we usually recommend a filter press for this duty. The disposal route — landfill, incineration, or a licensed contractor — should be confirmed before commissioning.

What does it cost to run, per cubic metre?

Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.

Do you handle installation and operator training?

Every unit we supply is commissioned by our own engineers. Training happens on site with your actual operators, and the O&M manual covers routine work plus troubleshooting. Remote diagnostics through the control system are included for the first year.

How long does a vinegar production system take to deliver?

Standard units ship in about 10 to 10 weeks. Custom trains with neutralisation and equalisation included run longer — plan for 16 to 22 weeks once detailed engineering starts. Site installation and wet commissioning add another few weeks.
