Kefir Production Wastewater Treatment: Cultures, Whey and the Cold Ferment
A kefir plant standardises milk, ferments it with kefir grains, separates and washes the grains, then cools and fills the drink, washing every tank between batches. The water it leaves is a fermented dairy effluent with a grain rinse attached. Standardisation and fermentation wash water carries the milk solids the culture left behind. Whey and grain rinse add the lactose and the live culture. Cold clean-in-place arrives soapy and sanitised in slugs. The effluent is lactose-rich, cool and stronger than a fresh-milk stream, and the design that works recovers the wash solids where a market exists, treats the lactose as the strong, easy carbon it is, and rides the cold CIP rhythm that defines a cultured plant.
Where the Water Comes From
Standardisation and fermentation wash water carries the milk solids the culture left behind. It is the strongest stream by organic load and it is entirely biodegradable.
Whey and kefir grain rinse adds the lactose and the live culture the separation step rejected. Its contribution is the dissolved load the biology must eat.
Cold clean-in-place arrives soapy and sanitised in slugs. It is the stream the equalisation tank is sized against.

Floor and equipment washing adds volume rather than load, and its contribution is the hydraulic design of the whole plant.
Grains and Whey
The grain rinse is recovered where a market exists for the culture or animal feed. A plant that returns it to the process removes most of its load at the source.
Whey carryover is strong, fully biodegradable lactose and protein. A plant that treats kefir water as a weak stream will undersize its biology.

The live culture in the rinse is no problem for the biology downstream; it is simply more organic load. The design treats it as such rather than as a disinfection duty.
The economics decide recovery. Where the plant runs continuously the payback is fast; small lines treat and size for the residual wash plus the rinse. A related discussion worth reading here is Iron, Phosphate and Sulfate.
What Our Project Data Actually Shows
Across 42 commissioned plants where we hold complete COD records, influent COD ranged from 200 to 172,000 mg/L and treated effluent from 50 to 5,000 mg/L. Average removal across that set is 87.1% — not a marketing figure, but the measured mean.
That average is worth pausing on. It sits well below the 95%-plus numbers most suppliers quote, because the set includes genuinely difficult streams. On some electroplating and municipal duties the installed configuration only reaches about half the influent COD, and saying that up front is more use to you than a number the plant will never hold.
| Metric | Measured value |

| Influent COD range | 200 – 172,000 mg/L |
| Treated COD range | 50 – 5,000 mg/L |

| Average treated COD | 264 mg/L |

Lactose and the Cold
Lactose in the wash water is a strong, fully biodegradable carbon source. Anaerobic treatment suits the segregated strong stream, and the biogas offsets the fuel the pasteuriser already burns all day. If your site also runs this kind of duty, Ternary NMC Cathode Material Production Wastewater Treatment system covers the cost side of the decision in more depth.

The cool temperature of a cultured plant means the biology runs at a lower rate than a warm dairy. The design allows for the lower rate rather than fighting it with oversized reactors that foul.
Nitrogen from the protein means some ammonia, and a compact anoxic zone keeps it inside consent. Foam from the protein traces appears in bursts, and a defoamer line is standard.

Heat and Equalisation
CIP arrives at a temperature the cold culture streams never reach. A mix point that brings the combined stream into the range biology tolerates is not an optional refinement.
The equalisation tank converts the fermentation and cleaning rhythm into a diet the biology can digest. It is sized against the CIP dump, not against the average flow.
Sample the lactose at the equalisation outlet. The average hides the slug, and the biology should never see a slug it was not designed for.

Recover the grain rinse where you can. Lactose and protein that return to the process are load you never have to treat.
Size the biology for the cold rate, not the warm-dairy assumption. Cultured plants consistently bias hot, and the biology pays for it.
Cool and equalise the CIP. The biology should never see a hot slug or a sugar spike it was not designed for. For the reuse angle specifically, Extrusion Solvent, Stretching Wash and Porosity Control goes further than we can here.
Why Choose Baihuipu as Your Manufacturer
Picking a supplier for this kind of plant is mostly about who carries the risk when something goes wrong. We have built this equipment for more than twenty years, and we are the ones who fabricated it, programmed the controls and will still answer the phone three years from now.
Manufacturing Base in Guangdong
Owned production lines mean we control tolerances, materials and delivery. Standard modular units and bespoke skids are both built by our own people, so schedule commitments are ours to keep.
Certification and Export Practice
CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.
Two Decades of Field Data
Food and beverage, chemicals, electroplating, textile dyeing, mining, municipal work — we have commissioned across all of them. The useful part is not the project count, it is having seen how plants fail in year seven and designing those failures out.
Complete Units and Turnkey Plants
Whether you need a single package unit or a turnkey installation with civil works, we deliver the entire treatment scheme. Our engineering team covers process, mechanical, electrical and automation so one party owns the outcome.
Spares, Service and Commissioning
Membranes, dosing pumps, diffusers, instrumentation and blowers are stocked for the systems we sell. Our control systems support remote diagnostics, and we can put an engineer on site for commissioning, training or an unplanned shutdown.

Frequently Asked Questions
What happens if the incoming kefir production load exceeds the design figure?
Load swings are the most common reason plants underperform. We set the design envelope from your worst-case samples, not your average ones, and specify enough buffer in the biological stage to ride out shocks. If your process genuinely shifts up permanently, we can usually add capacity in stages.
How long does a kefir production system take to deliver?
Standard units ship in about 9 to 13 weeks. Custom trains with grains and whey included run longer — plan for 15 to 25 weeks once detailed engineering starts. Site installation and wet commissioning add another few weeks.
What information do you need to quote?
Water analysis for your worst-case stream, peak and average flows, discharge limits, available footprint and utilities. If you do not have a full analysis yet, we can start from a partial one and flag the gaps.
Can you work with our existing equipment?
Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.
