Gummy Candy Production Wastewater Treatment: Gelatin, Sugar and Starch Sludge

Gummy candy is made by dissolving gelatin and sugar into a hot syrup, depositing it into corn-starch moulds, drying the sweets, and tumbling the starch off. The water that leaves is a confectionery effluent that is sticky by design. Starch from the moulding and tumbling carries the fine solid that sets the sludge character. Deposit and kettle wash water carries the gelatin and sugar that did not become sweets. Cooling and floor wash add the volume. The effluent is high in COD, warm and full of a fine starch fraction, and the design that works recovers the starch where a market exists, removes the rest mechanically, and treats the sugar as the strong, easy carbon it is.

Where the Water Comes From

Corn-starch moulding and tumbling water carries the fine starch fraction. It is the finest solid in the plant and the one that sets the sludge character.

Deposit and kettle wash water carries the gelatin and sugar that did not become sweets. It is the strongest stream by organic load and it is entirely biodegradable.

Cooling and drying exhaust scrubber water is warm and dilute, and its volume is what the equalisation tank is sized against.

Floor and equipment washing adds volume rather than load, and its contribution is the hydraulic design of the whole plant.

Starch Recovery

The starch is recovered where a market exists, as animal feed or a by-product. A plant that returns it to the process removes most of its solids load at the source.

Screening takes out the coarse fraction at the drain, and a settling or thickening step recovers the fine fraction before the biological stage sees the water.

The operational trap is storage. Starch water held warm overnight ferments, and the treatment plant then inherits both the load and the smell. Much of this mirrors the situation set out in ice cream and frozen dessert plant wastewater treatment.

What This Looks Like in Practice

For comparison, our 2021 project in Hong'an, Hubei ran at 150 m³/day with influent COD near 1,961 mg/L and treated water around 200 mg/L. That is 89.8% removal in practice, not on paper.

Gelatin and Sugar

Gelatin and sugar in the wash water are strong, fully biodegradable carbon. A plant that treats gummy water as a weak stream will undersize its biological stage.

Anaerobic treatment suits the segregated strong stream, and the biogas offsets the fuel the kettles already burn all day. The aerobic stage behind it is sized smaller. We have written about the downstream implications separately in Cheese Production Wastewater Treatment system.

Foam from the gelatin traces appears in the aeration basin in bursts, and a defoamer dosing point is the standard answer.

Biological Treatment

After starch recovery and flotation, the remaining load is moderate and biodegradable, and a compact aerobic stage finishes it. The biomass here is doing a small, well-defined job.

Where the plant has no anaerobic capacity, extended aeration handles the full stream, at the cost of a larger basin and a larger power bill.

Polishing, where a sensitive receiver applies, is a sand or membrane step, and its fouling rate is a good early indicator of how well the upstream starch removal is running.

Operating Notes

Recover the starch where you can. Starch that returns to the process is load you never have to treat.

Settle the fine fraction early. Particles this fine blind membranes and smother biomass, and neither recovers quickly.

Size the biology on the sugar, not on the average. Gummy water is stronger than it looks.

Combining Treatment Stages

If your site also runs this kind of duty, Lime, Viscosity and Starch covers the cost side of the decision in more depth. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.

Why Choose Baihuipu as Your Manufacturer

Choosing a manufacturer here comes down to one question: who is still accountable once the commissioning team flies home. Our answer is that we build and programme our own equipment, then stand behind it for the life of the plant.

In-House Fabrication

Our Guangdong works produces everything from standard modular units to fully bespoke lines. Building in-house keeps cost, schedule and quality under our own control rather than a subcontractor's goodwill.

Documentation You Can Actually Audit

Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Experience Built the Hard Way

Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.

Complete Units and Turnkey Plants

Whether you need a single package unit or a turnkey installation with civil works, we deliver the entire treatment scheme. Our engineering team covers process, mechanical, electrical and automation so one party owns the outcome.

Spares, Service and Commissioning

Membranes, dosing pumps, diffusers, instrumentation and blowers are stocked for the systems we sell. Our control systems support remote diagnostics, and we can put an engineer on site for commissioning, training or an unplanned shutdown.

Frequently Asked Questions

What happens if the incoming gummy candy production load exceeds the design figure?

Load swings are the most common reason plants underperform. We set the design envelope from your worst-case samples, not your average ones, and specify enough buffer in the biological stage to ride out shocks. If your process genuinely shifts up permanently, we can usually add capacity in stages.

Can you work with our existing equipment?

Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.

Do you export and support overseas installations?

We have shipped to the USA, Canada, Indonesia, India, Russia, Vietnam and Nigeria among others. Documentation, crating and export paperwork are handled in-house, and we support commissioning either remotely or with engineers on site.

What information do you need to quote?

Water analysis for your worst-case stream, peak and average flows, discharge limits, available footprint and utilities. If you do not have a full analysis yet, we can start from a partial one and flag the gaps.

How long does a gummy candy production system take to deliver?

Standard units ship in about 11 to 12 weeks. Custom trains with starch recovery included run longer — plan for 16 to 25 weeks once detailed engineering starts. Site installation and wet commissioning add another few weeks.

Do you handle installation and operator training?

Every unit we supply is commissioned by our own engineers. Training happens on site with your actual operators, and the O&M manual covers routine work plus troubleshooting. Remote diagnostics through the control system are included for the first year.
