Cheese Production Wastewater Treatment: Whey, Curd Wash Water and Brine

A cheese plant coagulates milk, cuts the curd, cooks it, presses it and brines it, and the water that leaves is defined by one stream: whey. The liquid that separates from the curd carries lactose, protein and minerals, and it is one of the strongest ordinary food effluents there is. Curd washing and pressing water carries fine curd particles. Brining and rind washing carry the salt that the cheese needs. The effluent is lactose-rich, slightly salty and warm, and the design that works recovers the whey where a market exists, removes the fat and fines mechanically, and treats the lactose as the strong, easy carbon it is.

The Whey Question

Sweet whey from rennet-coagulated cheese and acid whey from fresh cheese both carry lactose at high concentration, and lactose is fully biodegradable, which is the useful part of the picture.

Whey has value. Drying, protein concentration and lactose crystallisation all have markets, and a plant that keeps the whey out of the drains removes the bulk of its load at the source.

The economics decide it. Recovery pays where volumes are large and steady; small plants treat, and they size for the residual whey plus the wash water rather than the average.

treatment plant on site

Whey that is not recovered is ideal anaerobic feed: soluble, warm and free of toxic inhibitors, and the biogas offsets the fuel that the pasteurisers burn all day.

Fat and Fines

Free fat from the curd washing and pressing water is intercepted at the drain, and the skimmed fat is collected where the volume justifies it. Much of this mirrors the situation set out in latex glove dipping wastewater treatment.

Fine curd particles are removed with a screen or a small settling step ahead of the main flow, and they are recovered as product where the plant's layout allows it. Where several streams need joint treatment, Wind Turbine Blade Manufacturing Wastewater Treatment is the more detailed reference.

The failure mode is housekeeping. A vat drain that bypasses its interceptor during a wash campaign sends an hour of neat cream into a plant sized for traces.

Brining and rind washing carry the salt that the cheese needs, and the salt is the part that limits the biology if it is not accounted for.

Where the brine is segregated, it can be recovered and reused after filtration, and the treatment plant is then sized for what escapes rather than for the whole stream.

The honest starting point is a salt balance over the whole plant. Where brine is bought for the product and the only exit is the effluent, no biology fixes that permanently.

Biological Treatment

After recovery and mechanical preparation, the remaining load is strong and soluble, and conventional anaerobic-aerobic treatment handles it. Anaerobic treatment suits plants with a segregated strong stream and a use for the biogas on site.

The aerobic stage is sized on the smoothed load. Nitrification is rarely the driver; the nitrogen in milk protein is modest and a compact anoxic zone keeps it inside consent.

Foam from the protein traces appears in the aeration basin in bursts, and a defoamer line is the standard answer.

What This Looks Like in Practice

For comparison, our 2021 project in Taishan, Guangdong ran at 5 m³/day with influent COD near 1,000 mg/L and treated water around 50 mg/L. That is 95% removal in practice, not on paper.

Operating Notes

Recover the whey where you can. Lactose that returns to the process is a load you never have to treat.

Keep the brine segregated. Salt that is metered into the plant over days is manageable; salt that is dumped in an hour is not.

Dewater the flotation sludge promptly. Dairy sludge turns acidic and odorous fast, and odour complaints arrive faster than consent breaches. For the reuse angle specifically, Optical Lens Grinding Wastewater Treatment system goes further than we can here.

Why Choose Baihuipu as Your Manufacturer

Picking a supplier for this kind of plant is mostly about who carries the risk when something goes wrong. We have built this equipment for more than twenty years, and we are the ones who fabricated it, programmed the controls and will still answer the phone three years from now.

Own Factory, Real Capacity

Tanks, skids, control panels and membrane housings are built in our own Guangdong facility. Nothing critical is subcontracted, which is why we can commit to delivery dates and hold quality across a batch instead of hoping the shop floor gets it right.

Two Decades of Field Data

Food and beverage, chemicals, electroplating, textile dyeing, mining, municipal work — we have commissioned across all of them. The useful part is not the project count, it is having seen how plants fail in year seven and designing those failures out.

We Engineer the Whole Train

Screening, equalisation, biological or chemical treatment, membranes, evaporation, brine handling — the complete line comes from one organisation. Process design, mechanical, electrical and PLC programming sit under the same roof, so there is no gap for finger-pointing at handover.

After the Handover

Spares for everything we install are held in stock. Remote telemetry is available on most systems, and our service engineers commission, train your operators and turn out for emergencies.

Documentation You Can Actually Audit

Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Frequently Asked Questions

Do you handle installation and operator training?

Every unit we supply is commissioned by our own engineers. Training happens on site with your actual operators, and the O&M manual covers routine work plus troubleshooting. Remote diagnostics through the control system are included for the first year.

Can you work with our existing equipment?

Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.

What treatment capacity do you normally design for cheese production?

Skid-mounted units cover roughly 45 to 614 m³/day depending on the duty, and parallel trains extend that further. We size against your actual peak hour flow rather than the daily average, because equalisation rarely absorbs the whole spike.
