Miso Fermentation Wastewater Treatment: Rice, Koji and the Salt Brine

A miso plant cooks and inoculates rice to grow koji, mashes steamed soybeans and rice with salt and koji, then ferments the paste in vats for months. The water it leaves is a fermented soy effluent with a salt problem most plants do not expect. Rice washing and steaming water carries the starch the grain released. Koji and mash wash add the soybean solids and the culture. Mash press and vat wash arrive salty, warm and brown in slugs. The effluent is high in chloride, warm and stronger than a fresh-soy stream, and the design that works recovers the soy solids where a market exists, treats the organic load as the strong, easy carbon it is, and respects the salt that defines a miso plant before the biology salts out.

Where the Water Comes From

Rice washing and steaming water carries the starch the grain released and the fine rice solids. It is the volume of the plant and the stream the equalisation tank is sized against.

Koji and mash wash water carries the soybean solids and the culture the fermentation left behind. It is the strongest stream by organic load and it is entirely biodegradable. Where several streams need joint treatment, essential oil distillation wastewater treatment is the more detailed reference.

Mash press and vat wash arrives salty, warm and brown in slugs. It is the stream that sets the chloride ceiling of the whole design.

treatment plant on site

Floor and equipment washing adds volume rather than load, and its contribution is the hydraulic design of the whole plant.

Free rice solids and koji fines are screened at the drain. A static screen on the wash line removes most of the load before it reaches anything expensive.

The recovered solids are returned to animal feed or compost where the local market allows it. A plant that keeps them out of the drain removes most of its suspended problem at the source.

settling tank detail

Screens are cleaned on a schedule tied to the batch. A blinded screen sends the whole starch load forward at once, and the downstream flotation unit spends days recovering from an hour of neglect.

Koji wash is the richer fraction. Treating it as a weak stream will undersize the biological stage, because the dissolved carbohydrate is anything but weak.

Salt Is the Constraint

The salt in miso water is not a nuisance; it is the single number that decides whether biology is even possible. A plant that ignores the chloride will watch its nitrifiers die in the first high-salt week.

Segregating the press and vat wash, which carry most of the salt, from the milder rice and koji streams is the move that makes the rest of the plant work. The salty fraction can be partly evaporated or sent to a brine-tolerant stage.

process equipment overview

Where the site allows land application or a crystalliser, the chloride is recovered rather than discharged. The economics decide it, but the salt balance must be drawn before any equipment is ordered. Where several streams need joint treatment, Margarine and Edible Fat Production effluent is the more detailed reference.

The failure mode is the recipe change. A saltier miso or a new product line with double the brine quietly pushes the biology past its tolerance, and the plant fails months after commissioning rather than on day one. A related discussion worth reading here is Gummy Candy Production Wastewater Treatment system.

Removal Rates Across Our Installed Base

Across 42 commissioned plants where we hold complete COD records, influent COD ranged from 200 to 172,000 mg/L and treated effluent from 50 to 5,000 mg/L. Average removal across that set is 87.1% — not a marketing figure, but the measured mean.

That average is worth pausing on. It sits well below the 95%-plus numbers most suppliers quote, because the set includes genuinely difficult streams. On some electroplating and municipal duties the installed configuration only reaches about half the influent COD, and saying that up front is more use to you than a number the plant will never hold.

Organic Load and Biology

Dissolved carbohydrate and soy protein in the effluent are strong, fully biodegradable carbon and nitrogen. Anaerobic treatment suits the segregated strong stream, and the biogas offsets the steam the vats already use.

installed skid unit

The aerobic stage behind it is sized modestly, because the load after anaerobic digestion is small. What it must handle reliably is the pressing and washing rhythm, and the equalisation tank smooths it. Much of this mirrors the situation set out in Breakfast Cereal Production Wastewater Treatment system.

Foam from the protein and the soybean traces appears in bursts, and a defoamer line is standard where the tank is covered. Nitrogen from the protein means some ammonia, and a compact anoxic zone keeps it inside consent.

Operators who meter the chloride at the outfall know their real limit. Operators who trust the average find out what it was, later, from a permit breach.

Operating Notes

Segregate the salty press water before anything else. It is the stream that decides whether biology is possible at all.

Screen the rice and koji solids at the drain. The screen is cheap there and the flotation unit is expensive here.

Size the biology on the organic load, not on the average. Miso water is stronger than it looks, and the salt hides in the press fraction.

Why Choose Baihuipu as Your Manufacturer

Two decades in this industry teaches you that most treatment problems are procurement problems in disguise. Someone bought the cheapest skid, nobody checked the equalisation volume, and eighteen months on the plant cannot hold its consent limit. We build differently.

Manufacturing Base in Guangdong

Owned production lines mean we control tolerances, materials and delivery. Standard modular units and bespoke skids are both built by our own people, so schedule commitments are ours to keep.

Documentation You Can Actually Audit

Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

20+ Years Across Dozens of Industries

Experience matters most when your waste stream behaves nothing like the textbook example. We have dealt with toxic organics, heavy metals, extreme salinity and refractory COD in food processing, chemical manufacturing, electroplating, mining and municipal projects.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

We Engineer the Whole Train

Screening, equalisation, biological or chemical treatment, membranes, evaporation, brine handling — the complete line comes from one organisation. Process design, mechanical, electrical and PLC programming sit under the same roof, so there is no gap for finger-pointing at handover.

After the Handover

Spares for everything we install are held in stock. Remote telemetry is available on most systems, and our service engineers commission, train your operators and turn out for emergencies.

Frequently Asked Questions

How much operator attention does the system need day to day?

Automatic control handles dosing, backwash and level control. Realistically your team spends time on chemical top-up, sample testing and sludge handling — maybe one to two hours per shift on miso fermentation duty, less if you opt for remote monitoring.

How do you handle sludge from this process?

Sludge handling is where most budgets quietly blow out. We size dewatering against realistic solids production, and we usually recommend a filter press for this duty. The disposal route — landfill, incineration, or a licensed contractor — should be confirmed before commissioning.

How long does a miso fermentation system take to deliver?

Standard units ship in about 9 to 12 weeks. Custom trains with rice and koji included run longer — plan for 15 to 25 weeks once detailed engineering starts. Site installation and wet commissioning add another few weeks.

Can the plant be modified later if our production changes?

Yes, if you tell us about likely expansion up front. Leaving room in the civil works and oversizing the equalisation tank costs far less than retrofitting later. Miso Fermentation Wastewater Treatment rarely fails because of bad chemistry — it usually fails because nobody planned for the second production line.

Which discharge standard will the treated water meet?

We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.

What happens if the incoming miso fermentation load exceeds the design figure?

Load swings are the most common reason plants underperform. We set the design envelope from your worst-case samples, not your average ones, and specify enough buffer in the biological stage to ride out shocks. If your process genuinely shifts up permanently, we can usually add capacity in stages.
