Margarine and Edible Fat Production Wastewater Treatment: Emulsion, Shortening and Wash Water

A margarine and edible fat plant blends oils, emulsifies and churns them with water and salt, forms the fat into blocks or tubs, and washes every contact surface with hot alkali between runs. The water it sends out is a food effluent defined by one thing: fat. Emulsion and filling wash water carry the free and emulsified fat. Shortening and frying lines add the heavier fat loads. Alkaline clean-in-place arrives hot, caustic and soapy in slugs. The effluent is greasy, warm and full of an emulsified fraction, and the design that works recovers the free fat at the drain, breaks the emulsion chemically, and treats the rest as a food stream rather than a purely biological one.

Where the Load Comes From

Emulsion and filling wash water carries the free and emulsified fat. It is the main stream of the plant and the one that gives the treatment plant its character.

Shortening and frying lines add the heavier fat loads, warm and slow to separate when fresh.

Alkaline clean-in-place arrives hot, caustic and soapy in slugs. It is the stream the equalisation tank is sized against. If your site also runs this kind of duty, Sesame Processing Plant Wastewater Treatment covers the cost side of the decision in more depth.

treatment plant on site

Floor and equipment washing adds detergent and heat, and it arrives in slugs that set the peak.

Fat Recovery

Free fat is recovered at the drain with a grease trap or a coalescing plate separator. The skimmed fat is collected where the volume justifies it. For the reuse angle specifically, commercial bakery wastewater treatment goes further than we can here.

settling tank detail

Fat recovered is fat not discharged, and a plant that returns it to the process removes most of its load at the source.

The failure mode is housekeeping. A line drain that bypasses its trap during a product changeover sends an hour of neat fat into a plant sized for traces.

Emulsion Breaking

Emulsified fat survives the interceptor. Coagulation and dissolved-air flotation break it, lifting the fat and the fine solids together in one step.

Measured Results from Plants We Built

For comparison, our 2021 project in Foshan, Guangdong ran at 60 m³/day with influent COD near 2,000 mg/L and treated water around 90 mg/L. That is 95.5% removal in practice, not on paper.

process equipment overview

The floc is sticky and it holds water, and the dewatering step is specified with that in mind rather than assumed. We have written about the downstream implications separately in Cannabis and CBD Extraction Wastewater Treatment.

Where the emulsion is stabilised by the emulsifiers, a small oxidation step ahead of coagulation breaks the stabiliser, and the design accounts for it from the start.

Operating Notes

Recover the fat at the drain, not at the treatment plant. The trap is cheap there and the flotation unit is expensive here. Much of this mirrors the situation set out in herbal extract manufacturing wastewater treatment.

Break the emulsion chemically. Biology does not eat fat, and emulsion that survives to the outfall is a consent question.

Watch the sludge. Fatty floc dewaters worse than ordinary biological sludge, and it shows up on the filter cake first.

Combining Treatment Stages

For the reuse angle specifically, Iron Oxide Pigment Production effluent goes further than we can here. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.

Why Choose Baihuipu as Your Manufacturer

Picking a supplier for this kind of plant is mostly about who carries the risk when something goes wrong. We have built this equipment for more than twenty years, and we are the ones who fabricated it, programmed the controls and will still answer the phone three years from now.

Own Factory, Real Capacity

Tanks, skids, control panels and membrane housings are built in our own Guangdong facility. Nothing critical is subcontracted, which is why we can commit to delivery dates and hold quality across a batch instead of hoping the shop floor gets it right.

Experience Built the Hard Way

Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.

Documentation You Can Actually Audit

Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

Complete System Responsibility

One supplier, one process guarantee. We take the plant from preliminary screening through to membrane separation, evaporation and brine management, with process, mechanical, electrical and controls engineering handled internally.

Spares, Service and Commissioning

Membranes, dosing pumps, diffusers, instrumentation and blowers are stocked for the systems we sell. Our control systems support remote diagnostics, and we can put an engineer on site for commissioning, training or an unplanned shutdown.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Frequently Asked Questions

What treatment capacity do you normally design for margarine edible fat production?

Skid-mounted units cover roughly 23 to 627 m³/day depending on the duty, and parallel trains extend that further. We size against your actual peak hour flow rather than the daily average, because equalisation rarely absorbs the whole spike.

Do you export and support overseas installations?

We have shipped to the USA, Canada, Indonesia, India, Russia, Vietnam and Nigeria among others. Documentation, crating and export paperwork are handled in-house, and we support commissioning either remotely or with engineers on site.

What does it cost to run, per cubic metre?

Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.

What happens if the incoming margarine edible fat load exceeds the design figure?

Load swings are the most common reason plants underperform. We set the design envelope from your worst-case samples, not your average ones, and specify enough buffer in the biological stage to ride out shocks. If your process genuinely shifts up permanently, we can usually add capacity in stages.
