Mayonnaise and Salad Dressing Wastewater Treatment: Emulsion, Egg and the Cold CIP
A dressing plant blends oil, egg yolk, vinegar and water into a stable emulsion, fills it cold, and washes the lines with sanitiser between flavours. The water it sends out is a chilled food effluent held together by an emulsion. Mixer and filler wash water carries the broken emulsion and the product that never left. Egg and oil carryover adds protein and fat together. Cold clean-in-place arrives soapy and sanitised in slugs. The effluent is greasy, it is cold rather than hot, and its fat is the emulsified kind that biology cannot eat directly, and the design that works recovers the free fat at the drain, breaks the emulsion chemically, and treats the protein as the strong, easy load it is.
Where the Load Comes From
Mixer and filler wash water carries the broken emulsion and the product itself. A single rinse of a line is stronger than an hour of general washdown, and it is the stream that sets the peak.
Egg and oil carryover from the blending step adds protein and fat together, and its contribution is the dissolved load the biology must eat.

Cold clean-in-place water arrives soapy and sanitised in slugs. It is the stream the equalisation tank is sized against.
Vinegar and acid addition lowers the pH in slugs, and the treatment train is specified to ride out the swings.

Fat and the Emulsion
Free fat is intercepted at the drain with a screen and a grease trap. The skimmed fat is collected where the volume justifies it.
Emulsified fat survives the interceptor. Coagulation and dissolved-air flotation break it, lifting the fat and the fine protein solids together in one step. The same selection criteria reappear in Soaking, Milling and Base Rinses, which is worth opening alongside this one.
The failure mode is the flavour changeover. A filler drain that bypasses its trap during a switch sends an hour of neat emulsion into a plant sized for traces.

Protein and Acid
Egg protein in the effluent is not a nuisance; it is a strong, fully biodegradable nitrogen and carbon source. Treating dressing water as a weak stream undersizes the biological stage. Plants dealing with comparable loads face many of the same trade-offs covered in Calcium Sulfate, Sulfate and High COD.
The low pH slugs from vinegar addition are buffered in the equalisation tank. A plant that lets the acid hit the biology directly spends a week recovering from an afternoon. Much of this mirrors the situation set out in Chitin and Chitosan Production Wastewater Treatment.
Removal Rates Across Our Installed Base
Across 42 commissioned plants where we hold complete COD records, influent COD ranged from 200 to 172,000 mg/L and treated effluent from 50 to 5,000 mg/L. Average removal across that set is 87.1% — not a marketing figure, but the measured mean.
That average is worth pausing on. It sits well below the 95%-plus numbers most suppliers quote, because the set includes genuinely difficult streams. On some electroplating and municipal duties the installed configuration only reaches about half the influent COD, and saying that up front is more use to you than a number the plant will never hold.
| Metric | Measured value |
|---|---|
| Plants with complete COD records | 42 |
| Influent COD range | 200 – 172,000 mg/L |
| Treated COD range | 50 – 5,000 mg/L |
| Average influent COD | 11,914 mg/L |
| Average treated COD | 264 mg/L |
| Average COD removal | 87.1% |
| Wastewater types covered | 30+ |
| Delivery period on record | 2021–2022 |

Foam appears in bursts from the protein traces, and a defoamer line is the standard answer where the tank is covered.
Operating Notes
Intercept the fat at the drain. The screen is cheap there and the flotation unit is expensive here.

Buffer the CIP acid before the biology. The tank exists to absorb slugs, not to pass them on.
Size the biology on the protein, not on the average. Dressing water is stronger than it looks.
Where This Fits in the Wider Plant
Much of this mirrors the situation set out in spodumene lithium concentrate processing wastewater treatment. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.
Why Choose Baihuipu as Your Manufacturer
Two decades in this industry teaches you that most treatment problems are procurement problems in disguise. Someone bought the cheapest skid, nobody checked the equalisation volume, and eighteen months on the plant cannot hold its consent limit. We build differently.
In-House Fabrication
Our Guangdong works produces everything from standard modular units to fully bespoke lines. Building in-house keeps cost, schedule and quality under our own control rather than a subcontractor's goodwill.
Experience Built the Hard Way
Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.
Complete Units and Turnkey Plants
Whether you need a single package unit or a turnkey installation with civil works, we deliver the entire treatment scheme. Our engineering team covers process, mechanical, electrical and automation so one party owns the outcome.
Twenty-Plus Export Markets
We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.
Certification and Export Practice
CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.
Spare Parts and After-Sales Support
We carry membranes, pumps, blowers, diffusers and instruments for every system we supply. Remote support through the PLC is standard on most builds, and on-site service covers commissioning, training and urgent callouts.
Documentation You Can Actually Audit
Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

Frequently Asked Questions
Do you handle installation and operator training?
Every unit we supply is commissioned by our own engineers. Training happens on site with your actual operators, and the O&M manual covers routine work plus troubleshooting. Remote diagnostics through the control system are included for the first year.
Is mayonnaise salad dressing treatment suitable for water reuse?
Usually yes, once the fat and the emulsion stage is stable. Reuse normally means adding membrane polishing to bring conductivity and COD down to your process water specification. We would need to see your reuse water limits to size it properly.
Can you work with our existing equipment?
Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.
What happens if the incoming mayonnaise salad dressing load exceeds the design figure?
Load swings are the most common reason plants underperform. We set the design envelope from your worst-case samples, not your average ones, and specify enough buffer in the biological stage to ride out shocks. If your process genuinely shifts up permanently, we can usually add capacity in stages.
Can the plant be modified later if our production changes?
Yes, if you tell us about likely expansion up front. Leaving room in the civil works and oversizing the equalisation tank costs far less than retrofitting later. Mayonnaise and Salad Dressing Wastewater Treatment rarely fails because of bad chemistry — it usually fails because nobody planned for the second production line.
What treatment capacity do you normally design for mayonnaise salad dressing?
Skid-mounted units cover roughly 24 to 486 m³/day depending on the duty, and parallel trains extend that further. We size against your actual peak hour flow rather than the daily average, because equalisation rarely absorbs the whole spike.
