Dairy Whey Wastewater Treatment: The Protein-Rich Stream Plants Used to Pour Down the Drain
Whey is what is left after cheese or casein is made, and for decades plants simply discharged it — which was a mistake, because whey is roughly 90 per cent of the milk's volume and most of its soluble nutrients. It is a high-BOD, low-pH (for acid whey) or near-neutral (for sweet whey) stream carrying lactose, soluble protein and minerals. Biologically it is easy; economically it is a missed opportunity. The plants that do well recover the protein and the lactose first and treat only what is left, because sending a food-grade stream to a digester is paying to destroy something you could have sold.
Where the Water Comes From
Cheese whey is the dominant fraction. After the curd is cut the whey drains off carrying lactose, whey protein and the milk minerals, and it is the load that defines the whole stream.
Acid whey from cottage cheese and casein is the sharper end. It arrives below pH 4 and it is the stream most likely to corrode concrete and shock a neutral biomass if it is not blended.
Butter and cream wash waters add a fatty, lower-volume load. They are the part that needs grease interception before anything biological, or the diffusers coke up fast.

CIP from the cheese vats is hot, caustic and sugary. Small in volume but large in character, and it belongs in the equalisation tank rather than straight to the drain.
Sweet Against Acid
Sweet whey sits near neutral and is the gentler of the two. Acid whey, from cottage cheese and casein, comes in well below pH 4 and needs blending or lime before the biology sees it. Plants dealing with comparable loads face many of the same trade-offs covered in Nonwoven Fabric Manufacturing Wastewater Treatment system.

The two behave differently in a digester. Acid whey's low pH and high calcium can precipitate and scale, while sweet whey feeds a digester almost too well if the load is not balanced. Much of this mirrors the situation set out in Quartz Crucible Production Wastewater Treatment system.
Blending them at the source saves the dosing cost. A plant that meters acid and sweet whey together often neutralises for free and avoids the scaling that pure acid whey causes.
Recover Before You Treat
Whey protein concentrate is the obvious win. Ultrafiltration pulls the protein, and that single step removes a large share of the load and turns it into a saleable powder.

Lactose recovery is the second one. Demineralised lactose or permeate powder has a market, and once the protein and sugar are out the remaining permeate is a much smaller treatment problem.
Plants that skip recovery pay twice. They buy chemical and energy to destroy a food-grade stream and they forgo the credit — and the digester still has to be built for the full load. We have written about the downstream implications separately in Pectin Extraction effluent.
What This Looks Like in Practice
For comparison, our 2021 project in Foshan, Guangdong ran at 60 m³/day with influent COD near 2,000 mg/L and treated water around 90 mg/L. That is 95.5% removal in practice, not on paper.
A second unit of the same class, delivered in Hong'an, Hubei during 2021, ran 150 m³/day at 1,961 mg/L feed COD down to 200 mg/L.
| Location | Year | Flow | Feed COD | Treated COD | Removal |
|---|---|---|---|---|---|
| Foshan, Guangdong | 2021 | 60 m³/d | 2,000 mg/L | 90 mg/L | 95.5% |
| Hong'an, Hubei | 2021 | 150 m³/d | 1,961 mg/L | 200 mg/L | 89.8% |
Figures are site-measured values from commissioned plants, not modelled estimates.
What the Biology Sees
After recovery the permeate is a clean lactose liquor. Anaerobic digestion takes it and returns biogas, and for a cheese plant the methane often offsets a real slice of the steam used in the vat.

The aerobic polish handles residual BOD and the nitrogen from the protein. It is compact because recovery removed most of the work upstream.
Equalisation smooths the cheese-making rhythm. Vats fill and drain in batches, and the biology sees the average only if the tank is sized against the peak rather than the lull.

Recover the protein before building the digester. Ultrafiltration pays for itself faster than almost any treatment unit and shrinks everything behind it.
Blend acid and sweet whey at the source. Metered together they neutralise for free and stop the scaling that pure acid whey causes in a digester.
Intercept the fat. Butter and cream wash water needs grease removal or the diffusers coke and the biomass smothers. Plants dealing with comparable loads face many of the same trade-offs covered in Yeast Production Wastewater Treatment system.
Integrated Treatment Strategies
Where several streams need joint treatment, corn starch production wastewater treatment is the more detailed reference. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.
Why Choose Baihuipu as Your Manufacturer
Picking a supplier for this kind of plant is mostly about who carries the risk when something goes wrong. We have built this equipment for more than twenty years, and we are the ones who fabricated it, programmed the controls and will still answer the phone three years from now.
Own Factory, Real Capacity
Tanks, skids, control panels and membrane housings are built in our own Guangdong facility. Nothing critical is subcontracted, which is why we can commit to delivery dates and hold quality across a batch instead of hoping the shop floor gets it right.
20+ Years Across Dozens of Industries
Experience matters most when your waste stream behaves nothing like the textbook example. We have dealt with toxic organics, heavy metals, extreme salinity and refractory COD in food processing, chemical manufacturing, electroplating, mining and municipal projects.
Complete System Responsibility
One supplier, one process guarantee. We take the plant from preliminary screening through to membrane separation, evaporation and brine management, with process, mechanical, electrical and controls engineering handled internally.
Spare Parts and After-Sales Support
We carry membranes, pumps, blowers, diffusers and instruments for every system we supply. Remote support through the PLC is standard on most builds, and on-site service covers commissioning, training and urgent callouts.
Twenty-Plus Export Markets
We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.
Certification and Export Practice
CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Frequently Asked Questions
Can you work with our existing equipment?
Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.
Do you export and support overseas installations?
We have shipped to the USA, Canada, Indonesia, India, Russia, Vietnam and Nigeria among others. Documentation, crating and export paperwork are handled in-house, and we support commissioning either remotely or with engineers on site.
Which discharge standard will the treated water meet?
We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.
Is dairy whey treatment suitable for water reuse?
Usually yes, once the sweet against acid stage is stable. Reuse normally means adding membrane polishing to bring conductivity and COD down to your process water specification. We would need to see your reuse water limits to size it properly.
What does it cost to run, per cubic metre?
Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.
Can the plant be modified later if our production changes?
Yes, if you tell us about likely expansion up front. Leaving room in the civil works and oversizing the equalisation tank costs far less than retrofitting later. Dairy Whey Wastewater Treatment rarely fails because of bad chemistry — it usually fails because nobody planned for the second production line.
