Brewery Wastewater Treatment: Spent Wort, CIP Caustic and the pH Swing That Catches Plants Out

A brewery typically draws four to six litres of water for every litre of beer it sells, and most of that returns as warm, sugary liquor laced with caustic and acid from cleaning. The single heaviest load is brewing liquor that never became beer — tank bottoms, surplus wort, the trub off the whirlpool. Then there is CIP, the clean-in-place cycle that pushes hot caustic and acid through the very same drains the beer uses. Spent yeast and filter aid add solids that settle badly. What makes the stream awkward is not the strength, which biology handles easily, but the pH swing: a caustic wash at pH 12 can land in the equalisation tank a few hours before an acid rinse at pH 2, and the biomass hates the ride.

Where the Water Comes From

The dominant load is brewing liquor that missed the fermenter. Knockout tank bottoms, surplus wort and whirlpool trub carry most of the dissolved sugar and yeast nutrients, and because they are warm and rich they go off faster than anything else on site.

CIP is the part that surprises people. A caustic wash runs around pH 11 to 12, an acid rinse follows near pH 2 to 3, and both reach the same pit a few hours apart — sometimes within the same shift.

Spent yeast and kieselguhr are the solids. They do not settle on their own and they keep respiring in the drain, so they drag dissolved oxygen down before the treatment plant ever sees them.

Fermentation and racking rinses are dilute but constant. They are the volume that sets the hydraulic size of the train, and they are why a brewery almost never sizes treatment on the brew count alone.

The pH Swing

Most brewery failures start here, not with the COD. A tank sized for the average pH will watch a caustic slug arrive, recover, then get hit by acid, and a biology tuned to neutral sits through all of it souring and shocked.

Equalisation is the cheap fix and most plants under-build it. Six to eight hours of mixed hold smooths the swing enough that the biological stage sees something close to steady, and that alone prevents a surprising number of upsets.

Blending the caustic and acid streams inside the tank does part of the neutralisation for free. Where the two are metered together the dosing cost drops, and the operator stops fighting spikes that were always going to cancel out. Much of this mirrors the situation set out in Honey Processing and Packing effluent.

Yeast, Solids and Heat

Spent yeast is a nitrogen gift and a handling headache at once. It is the nutrient the biology would otherwise be dosed with, but left warm in a drain it acidifies and stinks within a day.

process equipment overview

A dissolved-air flotation unit or a well-run clarifier pulls the yeast and the filter aid before they reach the biology. Skimmed yeast has a feed value, so some brewers recover it rather than pay to treat it.

The stream is warm — often 30 to 40 °C off the hot side — and that heat is an asset if the tank is covered and mixed. Cold-climate plants especially benefit, because warm feed keeps an anaerobic digester happy through winter.

Once the pH is steady the load is boring in the best way: high BOD, fully biodegradable, low in anything toxic. UASB or an aerobic basin clears it without drama provided the head of the plant did its job.

Reference Data from Our Own Projects

For comparison, our 2021 project in Foshan, Guangdong ran at 60 m³/day with influent COD near 2,000 mg/L and treated water around 90 mg/L. That is 95.5% removal in practice, not on paper.

A second unit of the same class, delivered in Hong'an, Hubei during 2021, ran 150 m³/day at 1,961 mg/L feed COD down to 200 mg/L.

Anaerobic digestion fits the rich fraction well. A UASB or EGSB takes the bulk of the COD and returns biogas, and for a mid-size brewery that methane often covers a real slice of the steam demand.

The aerobic polish behind it is compact because the hard work is already done. Most of what reaches it is residual BOD and the nitrogen from the yeast, and that is a much smaller problem than the raw stream suggested.

What We Tell Brewers First

Build the equalisation tank bigger than feels necessary. The COD is not your enemy; the pH swing is, and a bigger mixed pit is the single change that stops most brewery plants from underperforming. Much of this mirrors the situation set out in Jam and Preserve Production effluent.

Recover the yeast before it rots. It is free nutrient and free solids removal, and the only reason plants skip it is that nobody owns the recovery step on the org chart.

Treat the heat as fuel. A covered, mixed tank turns a warm rich liquor into a steady anaerobic feed, and that is where the operating cost actually comes down. The same selection criteria reappear in Yogurt and Cultured Dairy effluent, which is worth opening alongside this one.

Why Choose Baihuipu as Your Manufacturer

Choosing a manufacturer here comes down to one question: who is still accountable once the commissioning team flies home. Our answer is that we build and programme our own equipment, then stand behind it for the life of the plant.

In-House Fabrication

Our Guangdong works produces everything from standard modular units to fully bespoke lines. Building in-house keeps cost, schedule and quality under our own control rather than a subcontractor's goodwill.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Two Decades of Field Data

Food and beverage, chemicals, electroplating, textile dyeing, mining, municipal work — we have commissioned across all of them. The useful part is not the project count, it is having seen how plants fail in year seven and designing those failures out.

Complete Units and Turnkey Plants

Whether you need a single package unit or a turnkey installation with civil works, we deliver the entire treatment scheme. Our engineering team covers process, mechanical, electrical and automation so one party owns the outcome.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Spares, Service and Commissioning

Membranes, dosing pumps, diffusers, instrumentation and blowers are stocked for the systems we sell. Our control systems support remote diagnostics, and we can put an engineer on site for commissioning, training or an unplanned shutdown.

Frequently Asked Questions

How do you handle sludge from this process?

Sludge handling is where most budgets quietly blow out. We size dewatering against realistic solids production, and we usually recommend a filter press for this duty. The disposal route — landfill, incineration, or a licensed contractor — should be confirmed before commissioning.

Which discharge standard will the treated water meet?

We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.

Can you work with our existing equipment?

Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.

What spare parts should we hold on site?

Critical spares are pumps, dosing valves, instrumentation sensors and any specialty media. We ship a recommended spares kit with the plant and hold stock for everything we supply, so lead times on replacements stay short.

How long does a brewery system take to deliver?

Standard units ship in about 8 to 12 weeks. Custom trains with ph swing included run longer — plan for 17 to 22 weeks once detailed engineering starts. Site installation and wet commissioning add another few weeks.
