Jam and Preserve Production Wastewater Treatment: Fruit Pulp, Sugar and Hot Syrup

A jam and preserve line washes fruit, pulps and sieves it, boils it with sugar in open kettles, fills the jars hot and cools them. The water that leaves is a fruit effluent that behaves like dessert. Fruit washing and pulping carry the pulp, the skins and the fine solids. Kettle and pan washing arrive hot, sweet and soapy in slugs. Syrup recovery and cooling water carry the sugar that the boiling step could not hold. The effluent is pulpy, it is warm, and it is stronger in sugar than most operators expect, and the design that works screens the solids early, cools the hot streams, and treats the sugar as a genuine organic load rather than as a nuisance.

Where the Water Comes From

Fruit washing and pulping water carries the pulp, the skins and the fine solids. It is the main stream of the plant and the one that sets the hydraulic load.

Kettle and pan washing arrives hot, sweet and soapy in slugs. It is the stream the equalisation tank is sized against.

Syrup recovery and cooling water carries dissolved sugar at a concentration that surprises operators who sample only at the final outfall.

treatment plant on site

Floor and equipment washing adds volume rather than load, and its contribution is the hydraulic design of the whole plant.

Free fruit pulp and skins are screened at the drain. A static or rotary screen on the wash drains removes most of the load before it reaches anything expensive.

The recovered pulp is disposed of with the plant's solid waste rather than through the water plant, and a plant that keeps it out of the drain removes most of its solids problem at the source.

settling tank detail

Screens are cleaned on a schedule. A blinded screen sends the whole load forward at once, and the downstream flotation unit spends a week recovering from an hour of neglect. If your site also runs this kind of duty, Zinc-Bromine Flow Battery Manufacturing Wastewater Treatment system covers the cost side of the decision in more depth.

Sugar and Pectin

Dissolved sugar in the effluent is a strong, fully biodegradable carbon source. A plant that treats its preserve water as a weak stream will undersize its biological stage.

Pectin and other fruit colloids add viscosity and slow settling. Coagulation and flotation break them, and the dewatering step is specified with the sticky floc in mind.

Anaerobic treatment is possible for the strongest segregated streams, and the biogas offsets the fuel the kettles already burn all day. The aerobic stage behind it is then sized smaller.

Heat and Equalisation

Kettle wash water arrives above the temperature biology tolerates. A cooling step or a mix point with cooler streams before the equalisation tank is not optional.

Measured Results from Plants We Built

One reference point: a 60 m³/day installation we delivered in Foshan, Guangdong (2021) was treating feed at roughly 2,000 mg/L COD and holding discharge near 90 mg/L, about 95.5% removal.

A second unit of the same class, delivered in Hong'an, Hubei during 2021, ran 150 m³/day at 1,961 mg/L feed COD down to 200 mg/L.

Hong'an, Hubei2021150 m³/d1,961 mg/L200 mg/L89.8%

Figures are site-measured values from commissioned plants, not modelled estimates.

The equalisation tank is what converts the cooking and cleaning campaign into a diet the biology can digest. It is sized against the hot wash dump, not the average.

Sample the sugar at the equalisation outlet. The truth about a preserve plant's load lives there, not at the final outfall. We have written about the downstream implications separately in Coconut Processing Plant effluent.

Operating Notes

Screen the pulp at the drain, not at the treatment plant. The screen is cheap there and expensive here.

Cool the kettle wash before the equalisation tank. Heat that biology cannot survive is a slow, expensive way to learn about temperature.

Size the biology on the sugar, not on the average. Preserve water is stronger than it looks.

Where This Fits in the Wider Plant

Where several streams need joint treatment, spice processing plant wastewater treatment is the more detailed reference. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.

Why Choose Baihuipu as Your Manufacturer

Picking a supplier for this kind of plant is mostly about who carries the risk when something goes wrong. We have built this equipment for more than twenty years, and we are the ones who fabricated it, programmed the controls and will still answer the phone three years from now.

Own Factory, Real Capacity

Tanks, skids, control panels and membrane housings are built in our own Guangdong facility. Nothing critical is subcontracted, which is why we can commit to delivery dates and hold quality across a batch instead of hoping the shop floor gets it right.

20+ Years Across Dozens of Industries

Experience matters most when your waste stream behaves nothing like the textbook example. We have dealt with toxic organics, heavy metals, extreme salinity and refractory COD in food processing, chemical manufacturing, electroplating, mining and municipal projects.

We Engineer the Whole Train

Screening, equalisation, biological or chemical treatment, membranes, evaporation, brine handling — the complete line comes from one organisation. Process design, mechanical, electrical and PLC programming sit under the same roof, so there is no gap for finger-pointing at handover.

After the Handover

Spares for everything we install are held in stock. Remote telemetry is available on most systems, and our service engineers commission, train your operators and turn out for emergencies.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Frequently Asked Questions

What information do you need to quote?

Water analysis for your worst-case stream, peak and average flows, discharge limits, available footprint and utilities. If you do not have a full analysis yet, we can start from a partial one and flag the gaps.

Which discharge standard will the treated water meet?

We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.

How much operator attention does the system need day to day?

Automatic control handles dosing, backwash and level control. Realistically your team spends time on chemical top-up, sample testing and sludge handling — maybe one to two hours per shift on jam preserve production duty, less if you opt for remote monitoring.

Can the plant be modified later if our production changes?

Yes, if you tell us about likely expansion up front. Leaving room in the civil works and oversizing the equalisation tank costs far less than retrofitting later. Jam and Preserve Production Wastewater Treatment rarely fails because of bad chemistry — it usually fails because nobody planned for the second production line.

What does it cost to run, per cubic metre?

Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.

How do you handle sludge from this process?

Sludge handling is where most budgets quietly blow out. We size dewatering against realistic solids production, and we usually recommend a filter press for this duty. The disposal route — landfill, incineration, or a licensed contractor — should be confirmed before commissioning.
