Potato Processing Wastewater Treatment: Starch, Protein and Peel Solids

Potato processing — fries, crisps, flakes, starch — makes water that looks harmless and behaves badly. Washing, peeling and cutting release starch and protein into the stream, and those are readily biodegradable but present in huge concentration during a production shift. The load is high, the solids are fine and the flow pulses with every batch of raw potatoes. Handle it as a strong biodegradable stream with a solids-handling job attached, and recover what you can before it becomes a treatment cost.

Where the Load Comes From

Raw potatoes arrive dirty and get washed, and that wash water is weak but full of soil and sand that abrades pumps if you let it through. The real load appears at peeling and cutting, where cell contents spill into the water.

Starch is the dominant component. It passes screens, gelatinises, and settles poorly, and it feeds slime-forming bacteria in any tank it sits in. Protein rides along with it and adds nitrogen the biology will later need to remove.

Peel and pulp are coarse but fine enough to foul. Removed early they are a recoverable sidestream; left in the water they are a dewatering and odour headache.

Flow pulses hard. A receiving truckload of potatoes, a line start-up, a clean-in-place — each spikes the load, and biomass fed that directly loses stability. The same selection criteria reappear in hydrogen peroxide production wastewater treatment, which is worth opening alongside this one.

Screening and centrifugation recover coarse starch, and on a crisp or flake line that recovered starch is saleable. Every tonne taken out upstream is a tonne of COD that never reaches the equalisation tank.

Fine starch that escapes recovery is the stubborn part. It gelatinises in the tank and encourages slime, so keeping it out is both a yield and a hygiene measure, not just a treatment saving.

Expect recovery efficiency to drift with the crop. A damaged or frost-affected potato loses more solids to water, and the treatment load rises with it — design the envelope for that, not for the textbook potato. We have written about the downstream implications separately in Uranium Mining and Milling Wastewater Treatment system.

Protein recovery as a co-product is harder than starch but worth chasing on big lines, because it removes nitrogen load before the biological stage has to deal with it.

Solids and Equalisation

Peel and pulp settle slowly and raise the apparent viscosity of the stream. Good primary settling removes the coarse fraction; the dissolved starch and protein need biology, not a clarifier.

A sized equalisation tank, mixed and buffered, is what makes the rest of the plant behave. Potato lines start and stop, and without real equalisation the aerated stage is forever chasing a spike.

pH is usually near neutral from the potatoes, which is a mercy, but the COD strength still demands a robust biological design rather than a small extended-aeration basin.

Temperature matters. Warm wash and blanch blowdown arrive warm, and a warm equalisation tank keeps the biology happier through a cold shift.

Anaerobic Then Aerobic

At the COD levels a potato line reaches during production, anaerobic digestion recovers methane and cuts the oxygen demand on the aerated stage. The gas can run a boiler through the season.

What This Looks Like in Practice

For comparison, our 2021 project in Foshan, Guangdong ran at 60 m³/day with influent COD near 2,000 mg/L and treated water around 90 mg/L. That is 95.5% removal in practice, not on paper.

Figures are site-measured values from commissioned plants, not modelled estimates.

The aerobic polish removes residual BOD and the nitrogen from the protein fraction. It is sized on the post-anaerobic load, which is a fraction of the raw COD.

Sludge from potato treatment is organic and dewaters moderately. Starch in the sludge is the complication, and enzymatic or chemical preconditioning before dewatering usually pays.

Nutrient balance matters. A very high COD-to-nitrogen ratio starves the biomass of nitrogen, and supplementing with a cheap nitrogen source is cheaper than losing treatment efficiency.

Operating Notes

Maximise starch and protein recovery before treatment. The water plant is cheaper when the product is taken out first.

Size equalisation against the line schedule, not the clock. Potato processing runs in bursts, and the tank has to absorb them.

Finally, keep solids out of dead zones. Potato pulp sours quickly and a stratified tank will generate smell and local anaerobic pockets that upset the train.

Combining Treatment Stages

We have written about the downstream implications separately in Iron Ore Beneficiation and Pellet Plant Wastewater Treatment. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.

Why Choose Baihuipu as Your Manufacturer

Choosing a manufacturer here comes down to one question: who is still accountable once the commissioning team flies home. Our answer is that we build and programme our own equipment, then stand behind it for the life of the plant.

Own Factory, Real Capacity

Tanks, skids, control panels and membrane housings are built in our own Guangdong facility. Nothing critical is subcontracted, which is why we can commit to delivery dates and hold quality across a batch instead of hoping the shop floor gets it right.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Experience Built the Hard Way

Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.

Documentation You Can Actually Audit

Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

Complete System Responsibility

One supplier, one process guarantee. We take the plant from preliminary screening through to membrane separation, evaporation and brine management, with process, mechanical, electrical and controls engineering handled internally.

After the Handover

Spares for everything we install are held in stock. Remote telemetry is available on most systems, and our service engineers commission, train your operators and turn out for emergencies.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Frequently Asked Questions

What spare parts should we hold on site?

Critical spares are pumps, dosing valves, instrumentation sensors and any specialty media. We ship a recommended spares kit with the plant and hold stock for everything we supply, so lead times on replacements stay short.

How much operator attention does the system need day to day?

Automatic control handles dosing, backwash and level control. Realistically your team spends time on chemical top-up, sample testing and sludge handling — maybe one to two hours per shift on potato processing duty, less if you opt for remote monitoring.

What does it cost to run, per cubic metre?

Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.

What treatment capacity do you normally design for potato processing?

Skid-mounted units cover roughly 47 to 865 m³/day depending on the duty, and parallel trains extend that further. We size against your actual peak hour flow rather than the daily average, because equalisation rarely absorbs the whole spike.
