Fruit Juice Concentration Wastewater Treatment: Pulp, Pectin and the Wash-Down Slug

A juice concentration line washes and presses fruit, clarifies and concentrates the juice by evaporation, and cleans every tank and line with hot caustic between runs. The water it sends out is a fruit effluent with a concentrate step attached. Fruit washing and pulping carry the pulp, the skins and the fine solids. Evaporator condensate carries the volatile fraction and is dilute and warm. Clean-in-place water arrives hot, caustic and soapy in slugs. The effluent is pulpy, it is warm, and it is stronger in sugar and pectin than most operators expect, and the design that works screens the solids early, cools the hot streams, and treats the sugar as a genuine organic load rather than a nuisance.

Where the Water Comes From

Fruit washing and pulping water carries the pulp, the skins and the fine solids. It is the main stream of the plant and the one that sets the hydraulic load.

Evaporator and finish condensate carries the volatile fraction and is dilute and warm. It is the volume that the equalisation tank is sized against.

Clean-in-place water from tanks, pipelines and fillers arrives hot, caustic and soapy in slugs. It is the stream that sets the peak of the equalisation tank.

treatment plant on site

Floor and equipment washing adds volume rather than load, and its contribution is the hydraulic design of the whole plant.

Pulp and Fines

Free fruit pulp and skins are screened at the drain. A static or rotary screen on the wash drains removes most of the load before it reaches anything expensive.

The recovered pulp is pressed and sent with the plant's pomace rather than through the water plant, and a plant that keeps it out of the drain removes most of its solids problem at the source. We have written about the downstream implications separately in Rice Milling and Processing Wastewater Treatment system.

settling tank detail

Screens are cleaned on a schedule tied to the fruit. A blinded screen sends the whole load forward at once, and the downstream flotation unit spends days recovering from an hour of neglect. A related discussion worth reading here is Peanut Processing Plant Wastewater Treatment.

Dissolved sugar in the effluent is a strong, fully biodegradable carbon source. A plant that treats its juice water as a weak stream will undersize its biological stage.

Numbers from Comparable Installations

One reference point: a 150 m³/day installation we delivered in Hong'an, Hubei (2021) was treating feed at roughly 1,961 mg/L COD and holding discharge near 200 mg/L, about 89.8% removal.

Figures are site-measured values from commissioned plants, not modelled estimates.

Pectin and other fruit colloids add viscosity and slow settling. Coagulation and flotation break them, and the dewatering step is specified with the sticky floc in mind.

Anaerobic treatment is possible for the strongest segregated streams, and the biogas offsets the fuel the evaporators already burn all day. The aerobic stage behind it is then sized smaller.

process equipment overview

Heat and Equalisation

CIP water arrives above the temperature biology tolerates. A cooling step or a mix point with cooler streams before the equalisation tank is not optional.

The equalisation tank converts the pressing and cleaning campaign into a diet the biology can digest. It is sized against the hot wash dump, not the average.

Sample the sugar at the equalisation outlet. The truth about a juice plant's load lives there, not at the final outfall.

Operating Notes

Screen the pulp at the drain, not at the treatment plant. The screen is cheap there and expensive here. Much of this mirrors the situation set out in Cashew Nut Processing Wastewater Treatment system.

Cool the CIP before the equalisation tank. Heat that biology cannot survive is a slow, expensive way to learn about temperature.

Size the biology on the sugar, not on the average. Juice water is stronger than it looks.

Combining Treatment Stages

We have written about the downstream implications separately in Pickled Vegetable Processing Wastewater Treatment system. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.

Why Choose Baihuipu as Your Manufacturer

Two decades in this industry teaches you that most treatment problems are procurement problems in disguise. Someone bought the cheapest skid, nobody checked the equalisation volume, and eighteen months on the plant cannot hold its consent limit. We build differently.

In-House Fabrication

Our Guangdong works produces everything from standard modular units to fully bespoke lines. Building in-house keeps cost, schedule and quality under our own control rather than a subcontractor's goodwill.

20+ Years Across Dozens of Industries

Experience matters most when your waste stream behaves nothing like the textbook example. We have dealt with toxic organics, heavy metals, extreme salinity and refractory COD in food processing, chemical manufacturing, electroplating, mining and municipal projects.

Complete Units and Turnkey Plants

Whether you need a single package unit or a turnkey installation with civil works, we deliver the entire treatment scheme. Our engineering team covers process, mechanical, electrical and automation so one party owns the outcome.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Spares, Service and Commissioning

Membranes, dosing pumps, diffusers, instrumentation and blowers are stocked for the systems we sell. Our control systems support remote diagnostics, and we can put an engineer on site for commissioning, training or an unplanned shutdown.

Frequently Asked Questions

What does it cost to run, per cubic metre?

Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.

What information do you need to quote?

Water analysis for your worst-case stream, peak and average flows, discharge limits, available footprint and utilities. If you do not have a full analysis yet, we can start from a partial one and flag the gaps.

Do you handle installation and operator training?

Every unit we supply is commissioned by our own engineers. Training happens on site with your actual operators, and the O&M manual covers routine work plus troubleshooting. Remote diagnostics through the control system are included for the first year.

Is fruit juice concentration treatment suitable for water reuse?

Usually yes, once the pulp and fines stage is stable. Reuse normally means adding membrane polishing to bring conductivity and COD down to your process water specification. We would need to see your reuse water limits to size it properly.
