Egg Processing Plant Wastewater Treatment: Shell Wash Water, Albumen and High Organic Load
An egg breaking or egg products plant turns shell eggs into liquid albumen, yolk and whole egg, and almost every drop of water it uses touches protein on the way out. Wash water from the incoming eggs, rinse water from the breaking lines, and clean-in-place circuits from pasteurisers and tanks all carry albumen, yolk traces and shell fines. The organic strength is high, the load swings with the breaking schedule, and the shell fragments are abrasive enough to shorten the life of pumps that were not chosen for them. The treatment logic that works is separation first, biology second, and a dose of humility about peak loads.
Where the Load Comes From
The breaking line is the strongest source. Eggs that leak, trays that drip and the first rinse of the breaking heads send liquid egg straight into the drains, and liquid egg is one of the strongest ordinary food effluents there is.
Egg washer water carries manure traces, feather and membrane fragments, and detergents from the wash cabinet. Its strength is lower but its grit content is higher, and the two facts point to different equipment. We have written about the downstream implications separately in silver refining and electroforming wastewater treatment.
Clean-in-place water from pasteurisers and storage tanks arrives hot, sometimes above what biology tolerates without equalisation, and it carries the same protein load in dilute form.

The schedule matters as much as the sources. A plant that breaks in two concentrated shifts produces two load peaks a day, and a treatment plant sized on the average will fail on the peaks.
Screening and Grit
Shell fragments are removed first, and they are removed early. A rotary screen or a drum screen catches the coarser fragments, and a grit channel or cyclone handles the fine abrasive particles that survive screening.
Pumps and mixers downstream of this point last years instead of months when the grit step is maintained, and that arithmetic alone justifies the equipment. The same selection criteria reappear in Brine and High TDS, which is worth opening alongside this one.

Screens also catch eggshell membrane, which mats and blinds anything finer. The screening stage is cleaned on a schedule, not on demand, because a blinded screen sends the whole load forward.
Protein and yolk fat are emulsified and light, and they respond well to dissolved-air flotation after a modest coagulant dose. The floated sludge is dense in protein and has value as an animal-feed ingredient where local rules allow it, which turns a disposal cost into a small credit.
Flotation typically removes a large share of the suspended solids and a meaningful share of the BOD before biology, and the saving in aeration capacity is what pays for the flotation unit.
The dose of coagulant is trimmed against the shift pattern rather than set once. Egg quality changes through the season and the water follows. A related discussion worth reading here is Brine Concentrate and Reject Management.
Numbers from Comparable Installations
One reference point: a 5 m³/day installation we delivered in Taishan, Guangdong (2021) was treating feed at roughly 1,000 mg/L COD and holding discharge near 50 mg/L, about 95% removal.
| Location | Year | Flow | Feed COD | Treated COD | Removal |
|---|---|---|---|---|---|
| Taishan, Guangdong | 2021 | 5 m³/d | 1,000 mg/L | 50 mg/L | 95% |

Biology and Equalisation
An equalisation tank between flotation and biology is not optional in this industry. It absorbs the breaking-shift peaks, the hot CIP dumps and the washdown surges, and it gives the biological stage a steady diet.
Anaerobic treatment is possible for the strongest segregated streams, and some plants run a contact reactor on breaking-line water alone. More often, the combined stream after flotation goes straight to extended aeration, which handles the protein load well once it has been smoothed.
Nitrification is rarely the driver here. The nitrogen in egg protein shows up as organic nitrogen and ammonia after hydrolysis, and a modest anoxic zone keeps it inside consent.

Operating Notes
Segregate the washer water from the breaking-line water at the drain. One carries grit, the other carries protein, and they are treated differently.
Dewater the flotation sludge promptly. Protein sludge turns acidic and odorous fast, and odour complaints arrive faster than consent breaches.
Watch the equalisation level against the breaking schedule. The treatment plant is a shift worker in this industry, and it needs to be managed like one.
Why Choose Baihuipu as Your Manufacturer
Choosing a manufacturer here comes down to one question: who is still accountable once the commissioning team flies home. Our answer is that we build and programme our own equipment, then stand behind it for the life of the plant.
Manufacturing Base in Guangdong
Owned production lines mean we control tolerances, materials and delivery. Standard modular units and bespoke skids are both built by our own people, so schedule commitments are ours to keep.
Documentation You Can Actually Audit
Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.
Certification and Export Practice
CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.
Experience Built the Hard Way
Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.
We Engineer the Whole Train
Screening, equalisation, biological or chemical treatment, membranes, evaporation, brine handling — the complete line comes from one organisation. Process design, mechanical, electrical and PLC programming sit under the same roof, so there is no gap for finger-pointing at handover.
After the Handover
Spares for everything we install are held in stock. Remote telemetry is available on most systems, and our service engineers commission, train your operators and turn out for emergencies.

Frequently Asked Questions
What information do you need to quote?
Water analysis for your worst-case stream, peak and average flows, discharge limits, available footprint and utilities. If you do not have a full analysis yet, we can start from a partial one and flag the gaps.
Which discharge standard will the treated water meet?
We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.
Can you work with our existing equipment?
Often yes. We regularly integrate into existing civil structures where the concrete is sound, replacing internals and controls rather than starting over. We will tell you honestly when legacy kit is beyond economic repair.
How much operator attention does the system need day to day?
Automatic control handles dosing, backwash and level control. Realistically your team spends time on chemical top-up, sample testing and sludge handling — maybe one to two hours per shift on egg processing plant duty, less if you opt for remote monitoring.
