Coffee Wet Milling Wastewater Treatment: Pulp Wash, Mucilage and Acidic High-BOD Effluent

A coffee wet mill removes the pulp and the sticky mucilage layer from the cherry before drying, and both operations use a lot of water. The result is an acidic, high-strength effluent with a heavy suspended solids load and a phenolic content that comes from the fruit itself. Wet mills are usually seasonal and often remote, which shapes the treatment as much as the chemistry does. The practical answer is a solids job first, because most of the load is attached to the pulp rather than dissolved in the water.

Pulp, Mucilage and the Water

Pulping separates the skin and much of the pulp from the bean, and the wash water leaving the pulper carries that material as a coarse, heavy suspended solid.

Mucilage is the harder fraction. It is a sticky polysaccharide layer that is removed by fermentation or mechanical washing, and it contributes most of the dissolved organic load. We have written about the downstream implications separately in bioethanol distillery wastewater treatment.

Where the mill uses fermentation to loosen the mucilage, the water carries an organic acid content as well, and the pH drops accordingly.

Water use varies widely between mills. Demucilaging mechanically without recycling uses several cubic metres per tonne of cherry, whereas a recirculating mechanical system uses far less and produces a correspondingly stronger stream.

treatment plant on site

The season matters. A mill that runs for three months and stands idle for nine has different problems from a plant that runs continuously, and storage is a design item rather than an afterthought. Where several streams need joint treatment, sisal fibre processing wastewater treatment is the more detailed reference.

The Solids Job

Most of the pollution in wet mill water is in the solid fraction, so screening and settling remove a large share of the load before any biology is involved.

Pulp separates readily and has value as compost or as a soil amendment, which makes the screening step a recovery operation rather than a disposal one. Much of this mirrors the situation set out in Malt House effluent.

The finer mucilage solids settle slowly and are usually handled in a pond or a settling basin sized for a long retention.

Separating the wash water from the mucilage water lets a mill treat the two fractions differently, and where volumes justify it that split is worth making.

The water is acidic, and neutralisation ahead of any biological stage is normally required. Lime is the common reagent because it is cheap and adds the alkalinity a digester needs.

Phenolic compounds come from the cherry and give the water a dark colour and a measurable inhibitory effect at concentration.

Dilution through recirculation reduces the phenolic concentration per pass but raises the total dissolved load, so the trade-off is managed rather than solved.

Measured Results from Plants We Built

We commissioned a 5 m³/day plant for this duty in Taishan, Guangdong back in 2021. Feed COD came in around 1,000 mg/L and left at 50 mg/L — 95% removal.

Figures are site-measured values from commissioned plants, not modelled estimates.

Acclimated biomass handles phenolics better than a fresh culture, which is one reason a seasonal plant should seed from the previous season rather than start cold.

process equipment overview

At the strength a wet mill produces, anaerobic digestion is a good fit, and at mill scale a covered lagoon or a simple reactor is often more appropriate than a high-rate system.

The gas offsets part of the drying energy, which at a mill with a mechanical dryer is the largest single energy item.

Aerobic or facultative polishing after digestion takes out the residual demand and reduces the odour that an untreated mill water carries.

Sludge and the Off-Season

Sludge from a wet mill is organic and dewaters reasonably, and it is usually composted with the pulp rather than dewatered mechanically on its own.

installed skid unit

The off-season is the operational risk. A plant that is drained and left dry for nine months needs its biomass protected or replaced, and that is planned rather than improvised.

Operating Notes

Screen the pulp first. It is the single largest share of the load and it has value once separated.

Reduce water use before treating water. A mill that recirculates its wash water has a smaller plant to build and run.

Finally, plan the shutdown. A seasonal wet mill fails at the start of a season more often than during it, and that failure is a startup problem, not a treatment problem.

Combining Treatment Stages

If your site also runs this kind of duty, Shiitake and Edible Mushroom Cultivation effluent covers the cost side of the decision in more depth. Most facilities do not run a single clean stream, and a shared equalisation and biological stage is usually the economical answer once the streams are chemically compatible.

Why Choose Baihuipu as Your Manufacturer

Two decades in this industry teaches you that most treatment problems are procurement problems in disguise. Someone bought the cheapest skid, nobody checked the equalisation volume, and eighteen months on the plant cannot hold its consent limit. We build differently.

In-House Fabrication

Our Guangdong works produces everything from standard modular units to fully bespoke lines. Building in-house keeps cost, schedule and quality under our own control rather than a subcontractor's goodwill.

Experience Built the Hard Way

Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.

Complete Units and Turnkey Plants

Whether you need a single package unit or a turnkey installation with civil works, we deliver the entire treatment scheme. Our engineering team covers process, mechanical, electrical and automation so one party owns the outcome.

After the Handover

Spares for everything we install are held in stock. Remote telemetry is available on most systems, and our service engineers commission, train your operators and turn out for emergencies.

Frequently Asked Questions

Do you handle installation and operator training?

Every unit we supply is commissioned by our own engineers. Training happens on site with your actual operators, and the O&M manual covers routine work plus troubleshooting. Remote diagnostics through the control system are included for the first year.

What treatment capacity do you normally design for coffee wet milling?

Skid-mounted units cover roughly 35 to 811 m³/day depending on the duty, and parallel trains extend that further. We size against your actual peak hour flow rather than the daily average, because equalisation rarely absorbs the whole spike.

What spare parts should we hold on site?

Critical spares are pumps, dosing valves, instrumentation sensors and any specialty media. We ship a recommended spares kit with the plant and hold stock for everything we supply, so lead times on replacements stay short.

How do you handle sludge from this process?

Sludge handling is where most budgets quietly blow out. We size dewatering against realistic solids production, and we usually recommend a filter press for this duty. The disposal route — landfill, incineration, or a licensed contractor — should be confirmed before commissioning.

Do you export and support overseas installations?

We have shipped to the USA, Canada, Indonesia, India, Russia, Vietnam and Nigeria among others. Documentation, crating and export paperwork are handled in-house, and we support commissioning either remotely or with engineers on site.
