Kombucha Production Wastewater Treatment: Brew, Sugar and the Tea Solids

A kombucha plant brews sweet tea, ferments it with a SCOBY culture, and washes every tank and filter between batches. The water it leaves is a fermented tea effluent with a sugar problem. Brew and fermentation wash water carries the sugar the culture did not convert and the tea solids. SCOBY and cellulose carryover add the live culture and the fibrous pellicle. Warm clean-in-place arrives acid and soapy in slugs. The effluent is sugar-rich, warm and stronger than the rinse water looks, and the design that works screens the tea and cellulose solids, treats the sugar as the strong, easy carbon it is, and rides the acidic CIP that defines a kombucha plant.

Where the Water Comes From

Brew and fermentation wash water carries the sugar the culture did not convert and the tea solids. It is the main stream and the one that sets the hydraulic load.

SCOBY and cellulose carryover from the pellicle adds the live culture and the fibrous solids. Its contribution is the suspended load the biology must settle. Where several streams need joint treatment, Soaking Water, Starch and Broken Rice is the more detailed reference.

Warm clean-in-place arrives acid and soapy in slugs. It is the stream the equalisation tank is sized against.

Floor and equipment washing adds volume rather than load, and its contribution is the hydraulic design of the whole plant. The process logic sits close to what is described in peanut processing plant wastewater treatment, particularly on the pretreatment side.

Tea and Cellulose

Free tea solids and cellulose from the pellicle are screened at the drain. A rotary screen on the brew drain removes most of the load before it reaches anything expensive.

settling tank detail

The recovered cellulose is a nuisance rather than a resource; it goes to compost or sludge rather than through the water plant, and a plant that keeps it out of the drain removes most of its solids problem at the source.

Screens are cleaned on a schedule tied to the batch. A blinded screen sends the whole load forward at once, and the downstream settling unit spends days recovering from an hour of neglect.

Measured Results from Plants We Built

For comparison, our 2021 project in Foshan, Guangdong ran at 60 m³/day with influent COD near 2,000 mg/L and treated water around 90 mg/L. That is 95.5% removal in practice, not on paper.

A second unit of the same class, delivered in Hong'an, Hubei during 2021, ran 150 m³/day at 1,961 mg/L feed COD down to 200 mg/L.

Sugar and the Acid

Dissolved sugar in the effluent is a strong, fully biodegradable carbon source. Treating kombucha water as a weak stream undersizes the biological stage by a wide margin. A related discussion worth reading here is Cashew Nut Processing effluent.

process equipment overview

The acidic CIP slug from the vinegar-based sanitiser lowers the pH hard. The equalisation tank buffers it; a plant that lets it hit the biology directly spends a week recovering from an afternoon.

Anaerobic treatment suits the strongest segregated streams, and the biogas offsets the fuel the brewer already burns. The aerobic stage behind it is sized smaller. Foam from the sugar traces appears in bursts, and a defoamer line is standard. A related discussion worth reading here is Pickled Vegetable Processing Wastewater Treatment.

Operating Notes

Screen the tea and cellulose at the drain. The screen is cheap there and the settling unit is expensive here.

Buffer the acid CIP before the biology. The tank exists to absorb slugs, not to pass them on.

Size the biology on the sugar, not on the average. Kombucha water is stronger than it looks. We have written about the downstream implications separately in maple syrup production wastewater treatment.

Why Choose Baihuipu as Your Manufacturer

Choosing a manufacturer here comes down to one question: who is still accountable once the commissioning team flies home. Our answer is that we build and programme our own equipment, then stand behind it for the life of the plant.

Own Factory, Real Capacity

Tanks, skids, control panels and membrane housings are built in our own Guangdong facility. Nothing critical is subcontracted, which is why we can commit to delivery dates and hold quality across a batch instead of hoping the shop floor gets it right.

Twenty-Plus Export Markets

We have shipped to the United States, Canada, Russia, Indonesia, India, Nigeria and Vietnam among others. Crating, export documentation and certificates are handled in-house, which keeps customs surprises to a minimum.

Experience Built the Hard Way

Since the early 2000s we have commissioned plants for food and beverage processors, chemical works, electroplaters, textile mills, mines and municipalities. The lessons that stick are scaling, fouling and sludge handling — those inform every design we issue.

Complete Units and Turnkey Plants

Whether you need a single package unit or a turnkey installation with civil works, we deliver the entire treatment scheme. Our engineering team covers process, mechanical, electrical and automation so one party owns the outcome.

Spare Parts and After-Sales Support

We carry membranes, pumps, blowers, diffusers and instruments for every system we supply. Remote support through the PLC is standard on most builds, and on-site service covers commissioning, training and urgent callouts.

Certification and Export Practice

CE marking is standard and we work to ISO 9001 procedures. Where a project calls for specific material grades, pressure vessel certification or ATEX-rated equipment, we build to that standard and ship the full documentation pack.

Documentation You Can Actually Audit

Each system ships with as-built drawings, material certificates, welding records and a functional specification. If a client's own consultant wants to review the process calculation basis, we hand it over rather than treating it as proprietary.

Frequently Asked Questions

What spare parts should we hold on site?

Critical spares are pumps, dosing valves, instrumentation sensors and any specialty media. We ship a recommended spares kit with the plant and hold stock for everything we supply, so lead times on replacements stay short.

What does it cost to run, per cubic metre?

Energy dominates, then chemicals, then sludge disposal. We give you a per-cubic-metre breakdown during proposal so you can compare it against your sewer charge — treating too aggressively is a common and expensive mistake.

Which discharge standard will the treated water meet?

We design against whatever consent applies at your boundary — GB 8978, local sewer limits, or a ZLD target with no liquid discharge at all. The design basis is agreed in writing before fabrication, so there is no argument later about what "compliant" meant.

Do you export and support overseas installations?

We have shipped to the USA, Canada, Indonesia, India, Russia, Vietnam and Nigeria among others. Documentation, crating and export paperwork are handled in-house, and we support commissioning either remotely or with engineers on site.
