Cocoa Processing Wastewater Treatment: Bean Wash, Alkalisation and High-BOD Plant Effluent

Cocoa processing moves from raw bean through roasting, alkalisation and pressing, and each step produces water with a different character. The bean wash is a solids and sugar stream, the alkalisation step contributes a caustic, coloured liquor, and the pressing and grinding areas add fat. The combined effluent is high in organic load and carries compounds that inhibit an unacclimated biomass. The useful move is to separate the caustic fraction from the organic fraction, because mixing them creates a salt and pH problem that neither stage needs.

Where the Load Comes From

Bean washing and cleaning removes pulp residue, dust and some sugar from the bean surface, and that water carries a suspended solids load along with dissolved organics.

Alkalisation, where it is used, treats the nib with an alkaline solution to modify colour and flavour. That step produces a strong, dark, high-pH liquor with a chemical oxygen demand of its own.

Pressing and grinding contribute fat. Cocoa butter in the water is a problem downstream because it coats surfaces and interferes with both separation and biological contact.

Plant cleaning adds the usual alkaline cleaning-in-place solution, which is a separate stream a plant should not route to the biological stage untreated.

The combined flow is therefore a mix of a solids problem, a caustic problem and a fat problem, and treating it as one stream is what makes it difficult.

Fat and Solids First

Fat is removed first, by a grease trap or a dissolved air flotation stage, because it degrades every downstream unit it reaches.

Screened solids from the bean wash are largely organic and have value as a soil amendment where the local market accepts it. Much of this mirrors the situation set out in antibiotic fermentation wastewater treatment.

The wash water has a moderate load compared with the alkalisation liquor, so where separate sewer runs exist, keeping the two apart is worth the pipework. The Alkalisation Liquor

The alkalising liquor is high in pH, dark and carries a significant dissolved load. Neutralising it before it reaches biology is not optional.

We commissioned a 5 m³/day plant for this duty in Taishan, Guangdong back in 2021. Feed COD came in around 1,000 mg/L and left at 50 mg/L — 95% removal.

Neutralisation with an acid or with the carbon dioxide in flue gas brings the pH into range and avoids adding the chloride or sulfate load that a mineral acid would add.

The colour survives treatment. Where a consent includes colour, a coagulation or oxidation polish is applied to the treated stream, not the raw one.

Because the liquor is strong and relatively small in volume, it is a candidate for separate treatment or for controlled bleed into the main stream rather than direct discharge into it.

Inhibitory Compounds

Cocoa contains theobromine and related compounds, and those carry into the water where they inhibit an unacclimated biomass at concentration.

Anaerobic treatment is more tolerant than aerobic once acclimated, which is one reason an anaerobic front end suits this stream.

A plant that starts a new treatment system on full-strength cocoa water without an acclimation period will see a long and avoidable startup.

Operating Notes

Keep the caustic liquor out of the biological feed. Neutralise and control it, or treat it as its own stream.

Remove fat at the head of the plant. It is the cheapest unit to install and the most expensive one to skip.

Finally, acclimate deliberately. Cocoa water contains compounds that an ordinary sludge has not seen, and the ramp matters more than the design loading.

Is cocoa processing treatment suitable for water reuse?

Usually yes, once the fat and solids first stage is stable. Reuse normally means adding membrane polishing to bring conductivity and COD down to your process water specification. We would need to see your reuse water limits to size it properly.

What happens if the incoming cocoa processing load exceeds the design figure?

Load swings are the most common reason plants underperform. We set the design envelope from your worst-case samples, not your average ones, and specify enough buffer in the biological stage to ride out shocks. If your process genuinely shifts up permanently, we can usually add capacity in stages.
